Why did you start Prescribe Nutrition?

In the world of health and wellness, you often find the majority of professionals are practicing because of their own personal health challenges that they faced in the past. It’s a pretty common story, and it’s our story. Both of us had chronic health issues in our teens and 20s, and unfortunately we couldn’t find answers when we went down the standard paths.

We knew food was at the core of what was ailing us, so we both went to school to study it. We hadn’t met yet, but we both felt that while there was tons (perhaps too much) information available on diets and weight loss, there was very little in the ways of healing your body with food. Traditionally, people either read books or hire a nutritionist for a session or two but ultimately have to fend for themselves.

Once we met, the idea for Prescribe Nutrition happened extremely quickly. We thought, “What if you could have nutrition support, education and a community to share with for an ongoing period of time… wouldn’t that be what it really takes to make new habits?” We built our first program at lightning speed, and the rest is history.

Tell us more about your January program, Prescribe 20.

What makes Prescribe 20 stand out and why are you so adamant that it’s not a diet?

Well, speaking of diets… we’ve tried them all—and that’s likely why we are where we are. I had a historical love affair with Diet Coke and Lean Cuisines (alongside counting points, then calories, then fat… you know), while [co-founder] Megan literally lived off of Boca Burgers and Pirate’s Booty in college. So, we know classic “diets.” The most common and true statement you will hear from us is this: there is no one diet fits all. That is why diets don’t work, they are filled with blanket statements that apply to everyone.

Unfortunately, what has happened over the many decades filled with dietary trends is that with each new one, we seem to move further away from understanding what foods work for us as individuals. There are very few rules that apply to everyone, and we think that those are: Whole, unprocessed and traditional foods nourish your body, and sugar doesn’t do anyone any favors.

From there, Prescribe Nutrition helps uncover specifics on what does and doesn’t work for you. Think you’re dairy intolerant? Our content and and support can help you figure it out. What’s your fave P20-approved recipe?

Oh gosh, it feels almost impossible to narrow it down. But, since I just made and tested it this week. It’s beyond flavorful and SO dang easy. And I think about it daily… my vote goes to PN Chicken Cacciatore.

SLOW COOKER CHICKEN CACCIATORE & ZOODLES

Makes 6 servings

This is comfort food at its finest. We love this Italian-style dish over a bed of zoodles (zucchini noodles) or cauliflower rice. Pull out the slow-cooker and have a hot meal waiting for you.

  • 2 tablespoons ghee or extra-virgin olive oil
  • 2 medium yellow or white onions, finely diced
  • ¼ cup tomato paste
  • 5 garlic cloves, minced
  • ½ ounce dried porcini mushrooms, rinsed and minced
  • 1 ½ lbs cremini mushrooms, trimmed and quartered
  • 1  15-ounce can diced tomatoes, drained
  • ½ cup organic chicken broth
  • ½ cup dry red wine
  • 2 teaspoons dried oregano
  • ¼ teaspoon red pepper flake
  • 3 pounds of boneless, skinless chicken thighs
  • Sea salt
  • Ground black pepper
  • ¼ cup basil leaves, chopped
  • Zoodles or cauliflower rice*

*You can now find pre-prepped zoodles or cauliflower rice in most grocery stores!

  1. Add the ghee or oil into a cast-iron or heavy bottom pan over medium-high heat. Add the onions and cook for 5 minutes until softened. Add the tomato paste, garlic and porcini mushrooms and cook an additional 4 minutes.
  2. Place mixture into a slow cooker, stir in the cremini mushrooms, tomatoes, broth, wine, oregano and red pepper.
  3. Generously season the chicken with salt and pepper and place in slow cooker, mixing to coat. Put lid on and cook for 4-6 hours on low.
  4. Sprinkle the chicken dish with fresh basil. Serve atop a bed of zoodles, or simple cauliflower rice.
